Recipe: Spaghetti with breadcrumbs, anchovies, and tuna roe

Bread crumbs

100 g of bread crumbs, 1 g of chili powder, 10 g of EVO.

Put everything in a pan and toast over low heat.

The pasta:

320 g of spaghetti, a clove of garlic, a sprig of thyme, 30 g of EVO, 40 g of anchovies, 80 g of tomatoes, 20 g of white wine, a sprig of parsley, 5 g of tuna roe.

In a large saucepan with the oil, sauté gently garlic and thyme. Add the previously cleaned anchovies, deglaze with white wine and add the tomatoes. Pour spaghetti previously cooked in salted water and season with a little oil, chopped parsley and tuna roe.

Composition of the dish

At the center of the plate,  form a nest with the spaghetti, then sprinkle with bread crumbs and grated tuna roe. Garnish with chopped tomatoes in garlic and anchovies. Complete with thread of EVO.  Enjoy!
